Cobia Restaurant is proof of that Tucked away in an unassuming little strip plaza on Belvedere Rd in West Palm Beach, it's the kind of place you could drive past a hundred times without ever imagining the culinary talent waiting inside.
Meet Chef Jose Luis, whose love of cooking began in his mother's kitchen, where he learned early on that food has a special way of bringing people together. That passion eventually led him to the kitchens of some of the Palm Beaches' most celebrated restaurants.
Jose started as a dishwasher at Pistache where Chef Julien Gremaud recognized Jose's excellent work ethic and promoted him to Garde Manger (Salad Chef). When Chef Julien opened Avocado Grill, he brought Jose with him where he excelled and unintentionally kept moving up the ladder. When critically acclaimed Chef Clay Conley heard about Jose, he made him an offer he couldn't refuse. Chef Jose was now working at Buccan in Palm Beach alongside a seven-time James Beard Award nominee!
Today, with a restaurant of his own, Chef Jose is putting all that experience, creativity, and passion to work. Influenced by his Latin roots and years of learning from the area's most exceptional chefs, Jose brings together flavors and techniques from around the world.
Cobia's menu is eclectic. From incredibly fresh sushi and sashimi to ceviche, Lomo Saltado and handmade empanadas, there's a fusion of Asian and Latin going on here. But that's not all. They're making ravioli and gnocchi from scratch - so you're going to find delicious homemade Italian dishes as well. Every dish is prepared fresh to order and crafted with the care you'd expect from a chef of this caliber.
